Sometimes you just need something simple yet satisfying!
This sausage traybake provides a healthy portion or protein, carbohydrate and fat all baked on one tray. If you don't have the exact same vegetables that I used, that's ok, this recipe works with almost any roast veg.
Serves 2
4 good quality butchers sausages or veggie sausages
2 carrots
1 large courgette
10 small new potatoes
½ a head of cauliflower
75g fresh basil
3 cloves of garlic
1 handful of pine nuts
1 large handful of freshly grated Parmesan
extra virgin olive oil
1 lemon
1 tsp mixed herbs
a generous pinch chilli flakes
1 tsp smoked paprika
1-2 tbsp avocado oil
Method
Chop the carrots, cauliflower, potatoes and courgette into small chunks.
To your veg add the mixed herbs, chili flakes, smoked paprika, salt, pepper, 2 whole garlic cloves and 1-2 tbsp avocado and mix thoroughly
Put the veg on a roasting tray, spreading the veg out evenly so they cook nicely
After 20 mins add the sausages of your choice to the tray, by nestling them in between the veg
Cook the sausages and veg for a further 20-30 mins, or until cooked
Whilst that’s cooking, make the pesto – In a food processor or Nutribullet add ½ a peeled garlic clove, basil, pine nuts, parmesan, olive oil, salt pepper and squeeze of lemon and periodically blitz and taste, adding enough oil until you reach a nice oozy consistency
Once the sausages and veg are cooked, plate them up and drizzle over that lovely home-made pesto and finally… ENJOY!
